Efeito da ação do Colletotrichum acutatum na qualidade da azeitona de diferentes cultivares em três estados de maturação

A azeitona, tem enfase na dieta mediterrânea pois é um produto que é bastante utilizado, em forma de azeite ou na forma de azeitona de mesa. Porem esta no seu crescimento é fustigada por doenças ou pragas, uma das doenças que tem vindo a destruir produções é a antracnose da oliveira, assim este trabalho dedicou-se ao estudo dos efeitos deste fungo Colletotrichum acutatum em três cultivares Cobrançosa, Galega Vulgar e Picual. O efeito deste fungo, provocou um decréscimo acentuado na composição fenólica das diferentes cultivares apresentando valores nas azeitonas não infetadas de teores de orto-difenóis entre 12,10±0.79 a 84,14±9,22 mg AG g-1 para teores 4,20±0,49 e 23,49±1,11 mg AG. g-1 nas azeitonas infetadas, teores de fenóis entre 12,69±0,91 a 57,23±3,47 mg AG g-1 para teores 4,87±0,16 e 25,67±2,66 mg AG g-1 nas azeitonas infetadas e teores entre 8,97±0,50 a 39,05±3,03 mg CAT g-1 para teores 3,72±0,07 e 19,66±0,83 mg CAT g-1 nas infetadas. Foi igualmente estudado o comportamento das diferentes cultivares ao nível da maturação (verde, semi verde e maduro). Por fim identificou-se por HPLC diferentes compostos dos quais o tirosol se mostrou como o maioritário, contudo a presença do fungo revelou que grande parte destes compostos são degradados. Notou-se que a cultivar Galega Vulgar foi a que teve uma maior degradação e a cultivar Picual embora tenha tido perdas nos dois primeiros estados de maturação, no último observou-se o contrário mostrando assim a capacidade de resposta ao ataque por parte do fungo.
The olive has emphasis in the Mediterranean diet because it is a product that is widely used, in the form of olive oil or in the form of table olives. However, in its growth is affected by diseases or pests, one of the diseases that has been destroying productions is the anthracnose of the olive tree, so this work was dedicated to the study of the effects of this fungus Colletotrichum Acutatum in three cultivars Cobrançosa, Galega Vulgar and Picual. The effect of this fungus caused a marked decrease in the phenolic composition of the different cultivars presenting values in the uninfected olives of ortho-diphenol contents between 12.10 ± 0.79 to 84.14 ± 9.22 mg AG g-1 for contents 4.20 ± 0.49 and 23.49 ± 1.11 mg AG g-1 in infected olives, phenol content between 12.69 ± 0.91 to 57.23 ± 3.47 mg AG g-1 for contents 4.87 ± 0.16 and 25.67 ± 2.66 mg AG g-1 in infected olives and contents between 8.97 ± 0.50 and 39.05 ± 3.03 mg CAT g-1 for contents 3.72 ± 0.07 and 19.66 ± 0.83 mg CAT g-1 in infected ones. The behavior of different cultivars at maturity level (green, semi-green and mature) was also studied. Finally, it was identified by HPLC different compounds of which tyrosol was the majority, however the presence of the fungus revealed that most of these compounds are degraded. It was noted that the cultivar Galega Vulgar had the highest degradation of phenolics compounds and the cultivar Picual, although it had losses in the first two ripening states, in the latter it was observed the opposite showing thus the responsiveness.
