    Comparison of splanchnic tissues mass of two sheep breeds offered two diets differing in roughage level

    It is a general believe that the local sheep breed Churra da Terra Quente (CTQ), reared in the Northeast of Portugal is well adapted to the conditions of its production system. However, there are large gaps on our knowledge to allow understanding of such claimed adaptation. Splanchnic tissues (ST) can account for 35-50% of body energy expenditure, this high demand for energy being positively related with the protein and cell turnover, which in turn allows adaptability and flexibility so that animals can respond to multiple physiological and environmental challenges. The objective of the present study was to compare ST weights of lambs from CTQ and from an exotic breed (Ile de France, IF) at the same mature body weight (MBW) and fed two diets differing in roughage level. The study was carried out with 15 female lambs from each of the two breeds. Initial body weight was 20.7±1.3 and 34.0±0.7 kg, for CTQ and IF respectively, corresponding to ca 45% of their MBW. Animals were assigned to be slaughtered as an initial group or when they reached ca 65% of their MBW, after being fed ad libitum a high (HR, 70% of meadow hay) or a low-roughage diet (LR, 25% of meadow hay), according to a 2x2 factorial design. ST were removed and weighed. Per kg empty BW, CTQ had higher weights of small intestine, large intestine, liver and total ST (P<0.05), the weights of rumen-reticulum and omasum being higher only at 65% of MBW (P<0.01). Weights of the rumen-reticulum, omasum, large intestine and total ST were higher (P<0.001) in sheep fed HR diet irrespective of breed, but no differences were observed for the weight of abomasum, small intestine and liver (P<0.05). This study confirms the existence of differences on relative weights of ST between sheep breeds at the same level of maturity and between animals fed diets with different roughage levels. In conclusion, the high ST weights of the local breed may lead to enhanced adaptation ability to its environment.

    Relative growth of body fat depots and carcass composition in Churra da Terra Quente ewes with

    The autochthonous Churra da Terra Quente (CTQ) sheep breed is reared in Northeast of Portugal under extensive production systems. These systems frequently involve relevant body composition changes due to the storing and mobilization of body reserves. However, information regarding the range of tissue changes is lacking. The objectives of this study were: examine the carcass composition variation and understand the fat depots distribution in CTQ ewes with different body condition score (BCS). Thirty seven non-lactating and non-pregnant CTQ ewes with 42.3±7.5 kg body weight (BW) and a BCS range from 1.5 to 4.5 were used. The BCS was obtained using the system based on a scale of 1 to 5 scores with a middle scale point. After slaughter, internal fat depots (omental- OF, mesenteric- MF, perirenal- PF and pelvic) were obtained and the carcasses were entirely dissected into muscle, fat (subcutaneous fat-SF and intermuscular fat-IF) and bone. Carcass composition and fat depots variations were analyzed by ANOVA. Allometric coefficients of the fat depots in relation to total fat were established using the Huxley equation with a log transformation. Carcass composition and internal fat varied considerably with BCS from 1.5 to 4.5 points. Muscle weight varied between 6.8 and 13.4 kg (P<0.05) and fat weight varied between 1.6 and 10.9 kg (P<0.05). Internal fat also exhibit a large variation (0.7 to 9.3 kg) (P<0.05). These findings reflect the variation of BW and clearly show that fat is the most variable tissue. In relation to total fat, OF and PF depots grew more rapidly (b=1.25 and 1.39, b>1, P<0.05, respectively), SF and IF grew at the same rate (b close to 1) and MF and pelvic fat depots grew more slowly (allometric growth coefficients <1).

    Avaliação da qualidade sensorial de carne de borrego Terincho. Efeito do sexo e do peso da carcaça.

    O objectivo principal deste trabalho e a caracterização sensorial de Borrego Terrincho, um produto com Denominação de Origem Protegida. Foram estudados os efeitos do sexo e do peso da carcaça. Foram avaliados as atributos sensoriais de dureza, suculência, intensidade e qualidade do flavour, intensidade do odor, fibrosidade, intensidade do sabor doce e aceitabilidade geral, em 28 fêmeas e 29 machos agrupados em Ires classes de peso de carcaça, entre 3 e 9 kg. A qualidade sensorial da carne foi avaliada por um painel de provadores treinado de 11 elementos, em cinco sessões. A carne foi previamente cozinhada num forno convencional ate que a temperatura interna atingisse as 70ge. De seguida a carne foi cortada em pedaços de 2x2xO,5 em e entregue aos membros do painel para avaliação segundo uma metodologia convencional. Os dados foram analisados recorrendo a uma Analise Procrusteana Generalizada, para minimizar as diferenças entre provadores. Os dois primeiros factores resultantes da análise explicaram 68,2% da variabilidade total. O efeito do sexo não foi detectado de forma evidente pelos provadores. No entanto, as mesmos conseguiram diferenciar as carnes de animais de pesos de carcaça distintos. Assim, os provadores avaliaram os animais mais pesados como mais duros e com odor e flavour mais intensos enquanto os animais mais leves foram considerados mais suculentos. Foram, também, as cordeiros com peso mais baixo aqueles que apresentaram maior aceitabilidade geral quando foi colocada essa questão aos provadores. Pode concluir-se, pela avaliação dos provadores que será mais adequado 0 abate dos cordeiros com pesos mais baixos pois serão melhor aceites pelos consumidores.

    Tratamientos cortos com diferentes dosis de FGA a finales de la estación de anestro de cabras de raza Serrana

    Este trabajo tuvo como objetivo comparar los efectos de la aplicación de dos tratamientos cortos con diferentes dosis de acetato de fluorogestona (FGA) – 45 mg vs. 20 mg –, en la inducción de la actividad reproductiva de cabras de la raza Serrana, ecotipo Transmontano, a finales de la estación de anestro. De acuerdo con los resultados alcanzados, hasta el día 3 de mayo todas las cabras estudiadas seguían en anestro estacional. La dosis de FGA administrada no afectó significativamente la respuesta reproductiva de las cabras Serranas.
