Caracterização fisiológica e agronómica de diferentes estratégias culturais para minimizar o stress estival em vitis vinifera L. na Região Demarcada do Douro

Resumo
Este trabalho teve como objectivo: comparar o comportamento vegetativo e vitícola das videiras situadas em cotas extremas duma parcela de vinha “ao alto”; estudar a influência que a grandeza da superfície foliar exposta e/ou a presença de partículas de calda bordalesa pode ter nesse comportamento, em particular no compromisso fotossíntese-transpiração e avaliar as implicações fisiológicas da orientação NW-SE das linhas de plantação das mesmas videiras. Os ensaios decorreram na Região Demarcada do Douro, em 1995, 1996 e 1997. No capítulo 1 - - faz-se uma breve reflexão aos aspectos essenciais que motivaram o presente estudo, salientando-se o modo de implantação e condução da vinha duriense nas últimas décadas e certos conhecimentos locais de natureza empírica. No capítulo 2 - - procurou-se, num primeiro ponto, caracterizar a Região Demarcada do Douro nos domínios institucional, geográfico, geológico, microclimático e fitossociológico; num segundo e terceiro ponto dentificaram-se alguns meca-nismos fisiológicos de resposta das videiras ao efeito do stress hídrico, luminoso e térmico e referiram-se algumas práticas culturais que podem ser mais adequadas à viticultura de regiões onde esses tipos de stress são mais frequentes, respectivamente. No capítulo 3 - - descreve-se a localização dos ensaios de campo, as condições edafo-climáticas em que os mesmos decorreram e o delineamento experimental seguido. Posteriormente, faz-se uma exposição detalhada da metodologia utilizada e por último apresentam-se os métodos de análise estatística, nomeadamente o cálculo da distribuição relativa das componentes de variância utilizando um modelo com as variáveis principais fixas. No capítulo 4 - - é calculada a contribuição de cada origem de variação ensaiada para a variação total dos diferentes parâmetros medidos ou estimados neste trabalho, quer em condições de campo quer de laboratório. Seguidamente, para as origens de variação que se manifestaram significativas e com peso assinalável para a variação total do parâmetro em análise, é feita uma apresentação, condensada em gráficos e quadros, dos valores médios estimados. No capítulo 5 - - dá-se conta do efeito de cada origem de variação no comportamento fisiológico e agronómico das videiras do ensaio e procede-se à sua discussão, à luz dos conhecimentos revistos no capítulo 2 deste trabalho. Efeito do Terreno. As condições edáficas da cota inferior da parcela de vinha “ao alto” permitiram que a expressão vegetativa das videiras dessa zona fosse maior do que no extremo oposto. Do ponto de vista fisiológico, em condições de maior secura estival, nas folhas mais expostas dessas videiras foi notório um acréscimo da capacidade fotossintética, do teor em pigmentos clorofilinos e do peso específico e uma maior acumulação em sacarose, amido e prolina. Em contrapartida, os copados das videiras da cota superior dessa parcela foram mais permeáveis à radiação incidente, o que se revelou positivo para as trocas gasosas em períodos de menores limitações hídricas. Ao nível do rendimento, as videiras da cota inferior do terreno foram muito mais produtivas mas, qualitativamente, a acumulação de açúcar nos bagos foi mais reduzida do que nas videiras da cota superior do terreno. Efeito da Forma da parede de vegetação. As videiras conduzidas em sebe baixa (≈80 cm) tinham, em geral, menor área foliar total. Todavia, nas folhas mais expostas dessas videiras, a condutância estomática, a actividade fotossintética, a taxa de transpiração, o potencial hídrico de base, o teor em prolina, açúcares solúveis e amido e o peso específico foram mais elevados do que nas folhas das videiras conduzidas em sebe alta (≈120 cm). A produção de uvas foi similar em ambas as formas de copado mas a relação entre esse parâmetro e a expressão vegetativa foi mais equilibrada nas videiras com copado baixo. A nível qualitativo, em 1995 e, de forma mais diluída, em 1997 foi assinalável um maior acréscimo na acumulação de açúcar e simultaneamente uma menor acidez total dos bagos colhidos nas videiras com copados altos. Efeito da Calda bordalesa. O poder reflector das folhas pulverizadas com calda bordalesa foi substancialmente aumentado enquanto a intensidade de luz transmitida e a temperatura dessas folhas diminuiram em relação às folhas testemunha. Do ponto de vista fisiológico, nessas folhas a capacidade fotossintética foi incrementada por menores limitações estomáticas e não estomáticas. A taxa de transpiração foi também aumentada mas a eficiência intrínseca do uso de água ou o potencial hídrico foliar não foram afectados. A menor senescência foliar nas videiras tratadas com calda bordalesa, sobretudo entre as que tinham parede de vegetação baixa, favoreceu um menor escaldão dos cachos, daí que se tenha registado nesta modalidade uma tendência para maior rendimento por cepa. Qualitativamente, as uvas produzidas por ambas as modalidades não foram distintas mas os teores em cobre foram bastante mais elevados na modalidade “calda bordalesa”. Efeito da Orientação das folhas. O distinto padrão diurno de exposição à luz solar das folhas das faces laterais NE e SW do copado implicou que as maiores taxas otossintéticas fossem registadas nas folhas expostas da face NE, durante a manhã. À tarde, a actividade fotossintética das folhas expostas ao Sol, ou seja da face SW, foi fortemente deprimida pelo fecho dos estomas e por limitações ao nível do aparelho fotossintético, designadamente com a perda de eficiência fotoquímica máxima do PSII e com o empobrecimento em pigmentos clorofilinos. Nas folhas da face NE do copado constatou-se que a acumulação de açúcares solúveis e de amido, desde manhã cedo até meio da tarde, foi mais elevada do que nas folhas da face oposta, enquanto em relação ao peso foliar específico verificou-se o contrário. Foi na face SW do copado que as folhas se mostraram mais vulneráveis à ocorrência de acidentes de vegetação provocados pelo Sol e onde se contaram o maior número de cachos com escaldão. An ecophysiological and agronomic characterisation of several viticultural strategies to alleviate summer stress in Vitis vinifera L. in the Douro Demarcated Wine Region. UTAD, Vila Real, Portugal. The aims of this study were: to compare vegetative and viticultural behaviour of grapevines on the upper and lower edges of one vineyard parcel planted in a steep hill, according to principal slope; to evaluate the influence on that behaviour that may result from the magnitude of exposed leaf surface and/or the presence of Bordeaux mixture particles, particularly on the compromise between photosynthesis and transpiration; and to investigate the physiological implications of planting grapevines with a NW-SE row orientation. The experiments were undertaken in Northern Portugal’s Douro Demarcated Wine Region in the years 1995, 1996 and 1997. The chapter 1 – – provides a brief reflection on the essential considerations that motivated the research, with particular emphasis given to systems of vineyard plantation and style of vine training over the last few decades, along with the presen-tation of some local knowledge of an empirical nature. In chapter 2 - - in the first place, we describe the Alto Douro region in institutional, geographical, geological, microclimatic and phyto-sociological terms. Secondly and finally, we identify some physiological mechanisms of the grapevine’s res-ponse to the effects of water, light and thermal stress and point to some viticultural practices that may be more appropriate for regions where these types of stress are more common. In chapter 3 - - we provide a characterisation of, among other elements, the soil and climate of the locality where the trials were conducted, along with details of the experimental design. Subsequently a detailed presentation of experimental and statistical methodology is provided, in particular the calculation of components of variance based on a fixed effects model. Chapter 4 - - provides the results of the research, centring on the calculation of the contribution of each source of variance to the total variation in the distinct parameters measured or estimated in the research, whether based on fieldwork or laboratory experiments. Average values relating to each of the sources of variance that have proven most significant, and which have noticeable influence in the total variation of a given parameter, are subse-quently presented graphically and in tabular form. Chapter 5 - - discusses the results and draws conclusion from the research. The effect of each source of variance on the physiological and agronomic behaviour of experimental grapevines is discussed in the light of the review of the current state of our knowledge provided in chapter 2. The effect of the Terrain. The soil conditions of the lower part of the plot of a vineyard planted vertically down to the slope allowed greater vegetative growth than in the uppermost part of the plot. From the physiological point of view, in summer-time conditions of heightened water scarcity, an increase in photosynthetic capacity, specific weight and chlorophyll, sucrose, starch and proline contents of exposed leaves of the grapevines planted at the lower end was noticeable. On the other hand, the grapevine canopies of the upper part of the plot were able to take advantage of fortuitous exposure to the sun’s rays, which favoured gaseous exchanges when water was in reasonable supply. With regard to yield, the grapevines canopies in the lower part of the plot were much more better but, qualitatively, the increment of sugars in the grapes was more reduced than in the grapevines on the uppermost part of the plot. The effect of Canopy height. In general, the grapevines with low vegetative height (i.e.of around 80 cm) had lower total leaf area. However, on the exposed leaves from such grapevines, stomatal conductance, photosynthetic activity, transpiration rate, predawn water potential, proline, starch and soluble carbohydrates contents and specific weight were all higher on leaves of grapevines with higher vegetative height (namely of around 120 cm). Grape production was similar for both the two canopy shapes but the ratio between grape production and vegetative growth was closer in grapevines with lower vegetative height. From the qualitative standpoint, in 1995 and 1997, there was notably larger increase in sugar and a lower total acidity in the grapes from grapevines with higher vegetative height. The effect of Bordeaux mixture. Leaves with Bordeaux mixture had enhanced reflective power, whereas their transmitted photon flux and temperature was lower compared to control leaves. From the physiological point of view, the photosynthetic capacity of treated leaves increased due to a lowering of both stomatal and non-stomatal limitations. Also, their transpiration rate was higher, but neither the intrinsic efficiency of water-use nor leaf water potential were affected. Lower leaf senescence of grapevines sprayed with Bordeaux mixture, mainly those with low vegetative height, inhibited scorching of grapes and, consequently, promoted higher yields per plant. Qualitatively, no distinction could be found between the grapes grown under these two viticultural modes, though the copper content was higher on those treated with “Bordeaux mixture”. The effect of leaf orientation. The different daily pattern of exposure to the sun’s rays of the NE and SW sides of the canopy respectively, meant that the exposed leaves of NE side of the canopy experienced higher photosynthesis rates during the morning. In the afternoon, the photosynthetic activity of leaves exposed to the sun’s rays, i.e. those on the SW side, was strongly inhibited by stomatal closure, as well as by photosynthetic apparatus limitations, related both to a decrease in maximum photochemical efficiency of PSII and to the impoverishment of chlorophyll pigmentation. It was found that cumulative increases in starch and soluble carbohydrates contents, from before dawn until mid afternoon, was higher in leaves on the NE side of the canopy than on those of the other side. With regard to leaf specific weight, precisely the opposite was found: it was on the SW side of the canopy that leaves proved more vulnerable to the occurrence of vegetative accidents provoked by light stress and where, consequently, there was a greater number of bunches of grapes with scorching.
